Brunswick Beef Stew Recipe
1 lb. boneless stew meat or simular, (I prefer beef chuck roast)
1 lb. Irish potatoes, cut up
1 lg. onion
2 c. canned tomatoes
1 c. cream style corn
Salt & pepper to taste
1/2 c. English peas
1/2 c. cooked butter beans
1/2 c. catsup
1 tbsp. vinegar
1 tbsp. lemon juice
1 tbsp. Worcestershire sauce
1 tsp. Tabasco
Cook the fryer and the beef stew meat until well done. Grind it in your blender and set aside. Now run your onions through the blender. Add the onion and potatoes to the broth from the chicken and stew meat. Cook until done in a large saucepan on top of range. Add the meat and other ingredients. Place all of this in a slow cooker and cook on low heat for 12 hours or high for 8 to 10 hours.
Lastly, add 1/2 cup barbecue sauce.
Yield: about 8 to 10 servings.
