Bavarian Beef Stew

Bavarian Beef Stew

3 pounds boneless beef (trim fat)
1 1/4 cups water
3/4 cup beer or beef broth
8-oz can tomato sauce
1/2 cup chopped onion
2 Tbsp sugar
1 Tbsp vinegar
1 tsp salt
1 tsp cinnamon
1 bay leaf
1/2 tsp pepper
1/2 tsp ginger

Cut beef into cubes. Combine water, beer or broth, tomato sauce,
onion, sugar, vinegar, salt, cinnamon, bay leaf, pepper and ginger in
a large pot or Dutch oven. When boiling, add the cut-up beef. Reduce
heat, cover and simmer until meat is tender, about 2-1/2 to 3 hours.
Discard bay leaf. If desired, thicken juices with a paste of
cornstarch and water. Serve on a bed of cooked noodles or rice.

Mexican Beef Stew

Mexican Pozole

Only a small amount of oil is needed to saute meat.

2 pounds lean beef, cubed
1 tablespoon olive oil
1 large onion, chopped
1 clove garlic, finely chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup cilantro
1 can (15 ounce) stewed tomatoes
2 ounces tomato paste
1 can (1 lb. 13 ounce) hominy

1.  In a large pot, heat oil.  Saute beef.

2.  Add onion, garlic, salt, pepper, cilantro, and enough
water to cover the meat.  Cover pot and cook over low heat
until meat is tender.

3.  Add tomatoes and tomato paste.  Continue cooking for
about 20 minutes.

4.  Add hominy and continue cooking another 15 minutes,
stirring occasionally, over low heat.  If too thick, add
water for desired consistency.

Option:  Skinless, boneless chicken breasts may be used
instead of beef cubes.

Ground Beef Stew

Beef  Stew Recipe 

1 1/2 qts. water
2 1/2 c. macaroni
1 1/2 lbs. ground beef
1 onion, chopped
1 qt. tomato juice
Salt & pepper to taste
2 c. frozen peas

Bring 1 1/2 quart water to boil in large kettle. 
Add macaroni.  
Brown ground beef and onion.
When redness is gone, add meat to macaroni.
Add tomato juice and salt and pepper to taste.
Simmer 1/2 hour.
Just before serving add 2 cups frozen peas.
Cook a few minutes and serve.
Serves 6 to 8.

Beef Curry Casserole

Beef Curry Casserole

1 lb. ground beef, browned
1 1/2 c. raw rice
3 c. water (may need more water, can use mushroom liquid)
1 (10 oz.) can tomato soup
1 lg. onion, sliced
1 1/4 tsp. curry powder
2 to 3 tbsp. bovril
1 can sliced mushrooms or brown 1/2 lb. fresh mushrooms

Put all ingredients together in a large serving casserole.
Bake at 350 degrees for 1 1/4 hours.
Stir several times while cooking.
Check for moisture.
Serve with sour cream.
Serves 6 to 8.

Ground Beef Recipe

All American Cheese Burgers

1 lb. ground beef
2 tsp. catsup
1 tsp. salt
1/8 tsp. pepper
8 slices tomatoes
8 slices American cheese
8 slices Bermuda onion
4 slices green pepper
4 slices crisp, cooked bacon
4 split hamburger buns, toasted & buttered

Mix the ground beef lightly with salt and pepper.
Shape into 4 patties about 1″ thick.
Pan fry over medium heat 8 minutes on each
side for medium, or until meat is done
as you like it.

Brush tops lightly with ketchup and cover each
hamburger with a cheese slice.
(Heat from ground beef patty will melt cheese.)

Top each with a tomato and onion slice.
Put together sandwich style on buttered buns
which have first been topped with one slice each
of green pepper, onion, tomato and cheese.

Top each cheeseburger with crisp slice of bacon.

Quick Dinner Recipe

Beef curry usually make for a quick dinner recipe.

Indian Beef Curry

3 lbs. beef stew
2 onions
3 garlic buds
1/2 c. oil
1 tbsp. curry powder
1/2 yogurt or tomato (if desired)
1 tsp. each salt and pepper

Fry the onions and garlic buds in oil until brown,
then add your curry powder and stewing beef.
Stew together for a few minutes while mixing well.
Add salt and pepper, stir and cover.
Cook for 20 to 30 minutes.

Wait until meat is tender.
Serve over plain rice.

To add more taste, you may try adding yogurt or
one pound of tomatoes.
Either way it’s delicious.
