Here's a lemmon peppered beef jerky recipes, I got from a very old farm lady when visiting her a few years ago.

Lemon Peppered Beef Jerky

1 (1 1/2 lb.) flank steak
1/3 c. soy sauce
1 tbsp. Worcestershire sauce
1/2 tsp. liquid smoke
1/4 tsp. garlic salt
1/2 tsp. lemon pepper

Peppered beef jerky recipes Method:
Trim off all visible fat from the beef flank steak, even if you like beef fat (it becomes rancid). Cut the meat lengthwise along with the meat grain into long thin strips, no more than 1/4 inch thick. Combine all the remaining ingredients and pour over the beef strips. Let it stand for 1 hour or cover and refrigerate overnight. (The flank steak strips will absorb most of the liquid.)

Arrange steak strips close together, but not overlapping on some standard cake racks set in shallow baking pans. Bake the meat in VERY SLOW oven, 150-175 degrees, for 11-12 hours. Store your beef jerky in an airtight container at room temperature. The jerky will keep indefinitely, if all the fat was removed!
