Low Carb Ground Beef Casserole
Ingredients:
3 cups spaghetti squash
1 beaten egg
1/3 cup Parmesan cheese
1 cup ricotta
1 beaten egg
1/2 lb ground beef
1/2 cup onion, chopped
1/4 cup green pepper, chopped
2 cups no sugar tomato sauce
garlic powder, oregano, basil, parsley
1/2 cup mozzarella, shredded

Now that you have gathered all the ingredients, its time to get to work…
Preheat your oven to 350F.
In a large skillet, mix the one egg, parmesan and squash,
Transfer the mix into a 9″ pie plate. Make sure it is spread out evenly.
Now mix the other egg and ricotta and apply this mix over the squash mixture.
In another skillet, brown the onoin with the sweet green pepper.
Drain the excess fat from the ground beef. Add spices and the no sugar tomato sauce and let it simmer for few minutes.
Spoon the ricotta mixture over the pie plate. Bake this for about 15 min. Now sprinkle the mozzarella over this and bake it for another 10 min. (until cheese are brown)
You can now remove it from the oven and let it sit for around 5 to 10 minutes before serving.
This should be enough for 6 servings (or 4 servings fir the real hungry!)
